Egg Puli Kuzhambu

Egg Puli Kuzambu
Ingredients:
Egg (Hard Boiled ) : 4
Tamrind Juice or Tamrind Paste (3/4 Cup)
Onions Diced
Green Chillies
Fresh Ginger Garlic paste
Fresh Coriander
Curry Leaves
Mustard, Cumin Seeds
Coriander and Red Chilly powder, Salt, Sugar and Oil

Preparation:
Boil eggs and keep aside. Heat oil in a pan, add Mustard and cumin  seeds, Curry Leaves and Green chillies.
Add onions and saute the Onions till light brown, add Turmeric and fresh ginger garlic paste. Saute till golden brown and add red chilli powder and Coriander powder.
Add some water and cook for 1 minute. Then add the tamarind extract and let it boil in medium flame.
 Add a Little sugar as it enhances taste. Boil for 15 to 20 minutes.
Make small cuts in the eggs for the curry flavor to be absorbed. Ad the eggs, and keep it in medium flame for 3 - 5 minutes.
Remove it from the stove and garnish with Coriander leaves.
Enjoy it with White rice and a little Gingely oil.
